The secret of a good Italian restaurant is, in large part, in the ingredients. There are many great Italian chefs who know all the recipes and know how to do their job very well and, however, do not make their dishes taste like Italy for a very simple reason: they do not use 100% Italian products as we do, The best Italian in Calpe.

There are a number of ingredients in Italian food that have to be really Italian (or follow a 100% Italian recipe in their preparation) so that they really confer that flavor of Italy to the dishes as we do them in Antica Roma Calpe. Some of them are the following:

  • Mascarpone, originally from Lombardy and similar to Spanish cheeses such as Galician Requeixo, is an essential ingredient for some desserts and sauces.
  • Prosciutto Yes, it is ham, but it is Italian ham, and it has its own specific elaboration and healing process. If a pizza must carry prosciutto, it should not bring ham.
  • Balsamic aceto (vinegar), originally from the Modena area. It is different from vinegars used in Spain, less acidic.
  • Oregano and basil. They can be grown here, but they must be of the same variety used in Italy, and always fresh.

And, finally, a separate note for pasta: fresh pasta must be really fresh, prepared in the restaurant itself following a traditional and pampered recipe so that it has the flavor it has to have. No industrial fresh pasta would not be the same.
